Yes, it is still "opening day" for those teams not playing today.

Well with six games today 40% of the teams did have today as opening day. I say that just because I'm not sure 60% is truly "most". Anyway, yes for the teams that start tomorrow I am sure they are considering it opening day. It's basically just a perspective thing!

Opening day is the first day on which professional baseball games are played. Sometimes, if there is a single game in Japan a few days early, they don't call that opening day, but more than a third of baseball teams played today.
Tomorrow is the opening day of the other teams, but not opening day of baseball.
